Instructions
Put 1 lemon's zest in a bowl, add butter. Put aside.
Blitz parmesan until crumbly in a food processor. Add lemon juice, basil, pistachio and olive oil into the food processor and blitz until combined.
Cook pasta in a pan.
Add cooked and hot pasta to the bowl with the zest and the butter, mix until the butter is melted.
Add the pesto mixture into the bowl and combine.
Serve hot.
Goes well with tuna steaks and New Zealand Sauvignon Blanc.
