Instructions
Mix onion, garlic, ginger, anchovies, coriander stems, peppers and coconut milk in a food processor.
Heat a non-stick pan. Add coconut oil and cook the curry paste until it is reduced.
Add vegetables (pak choi, water chestnuts, etc.)
Add shrimps. Cook, stirring occasionally, until done.
Once the shrimps are cooked, turn off the heat. Add lime juice and coriander leaves. Serve with fish sauce and chilli peppers (optional).
