Semolina Sponge Cake Base





A light and easy sponge base for the most scrumptious cakes. Just choose your favourite filling and indulge.
 

  • Instructions

  1. Preheat the oven to 180C fan. 

  2. Separate eggs.

  3. Beat egg yolks with 2 tbsp coconut sugar until pale and all sugar dissolved. Add a splash of milk and semolina flour. Stir until combined.

  4. Beat egg whites on high speed until soft peaks form. With the mixer on, add the remaining 1 tbsp coconut sugar until peaks become stiff and firm.

  5. Fold egg whites into the batter very gently until just combined.

  6. Coat an oven dish with butter. Pour the mixture into the oven dish and gently spread to even out the surface.

  7. Bake for 20mins or until a toothpick comes out clean.

  8. Allow to cool completely before adding your favourite filling.
